This easy taco soup recipe is absolutely delicious and a family favorite! Full of delicious tomato, meat, and spice it is a hearty and delicious soup. You can even top it with all of your favorite taco toppings!

Easy Taco Soup Recipe 

Taco soup is one of our easy dinner ideas that is a go-to when I don’t have much time or energy!

As the weather cools, my family is always asking for one of their favorite comfort meals–this easy Taco Soup recipe.  Everyone in the family is happy with the tangy bean and beef soup because they control the toppings!  Add some cheese, tortilla strips and fresh jalapeños in the quantity you desire!

How to Make This Deliciously Easy Taco Soup Recipe

Add a twist to your next Taco Tuesday with a warm bowl of hearty soup! It’s a great dinner recipe for kids of all ages.

Depending on your kids’ tolerance for spicy foods, you can create a base that satisfies the entire family, but can be spiced up with add-ons and toppings.

  • Serves 4-6
  • Prep Time: 5 minutes
  • Cook Time: 20 minutes

Ingredients Needed For This Hearty Taco Soup Recipe

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 can (48 oz) tomato juice
  • cup sugar, or a little less depending on taste
  • 1 cup frozen corn
  • 1 package taco seasoning or 2 tablespoons
  • 1 can (16 oz) chili beans

At my house we are all about the toppings!  I am suspicious that the toppings are why this is such a favorite.  Every family member can customize their taco soup the way they love…

  • Tortilla chips
  • Corn chips
  • Dollop of Sour cream
  • Grated cheese
  • Avocado, diced
  • Jalapeños, sliced
  • Cotija cheese
  • Hot Sauce
  • Lime Wedges

How To Make This Tasty Taco Soup Recipe

One of the other reasons why I love this recipe so much is that it can be done all in one large pot making cooking, serving and clean-up a breeze.  This recipe can also be done in the crock pot if you have limited time.

Step 1

First, in a large skillet, cook ground beef and onion, drain if necessary.

Taco Soup Recipe Step 2 - Drain the grease of the browned meat and onion mixtureCarefully drain all of the grease.

Step 2

Next, put the beef and onion mixture back on the stove, add all ingredients to large pot or dutch oven.  This is when you want to transfer things to the crockpot if you want to finish the recipe in the slow cooker.

Step 3

Stir the ingredients all together and cook allowing the flavors to combine.

Step 4 – Stovetop

Cook on stovetop for 15-30 minutes.

Step 5 – Slow Cooker

Or cook in Crockpot 4 hours on low or 2 hours on high.

Step 6

Serve with toppings of your choice.  My favorite combination is fresh jalapeños, tortilla strips, avocado and Cotija cheese.

Step 7

If you have any left-overs, they store well in the refrigerator in an air tight container.  Heating a serving up in the microwave works really well and is a tasty lunch the next day.

Cook Time 20 minutes

Total Time 25 minutes

    7. Store leftovers in refrigerator.

    Spice Up Your Taco Soup And Make It Your Own

    You can make your soup extra delicious and hearty as is or add your own tasty twists. Instead of tomato juice you can use chicken broth and tomato sauce.

    Add fresh green chilies, or you can use rotel as it has chunky tomatoes and green chiles. Rotel tomatoes can bring some medium heat or medium-high heat.

    Don’t like chili beans? Or don’t have them among your pantry staples? You can use kidney beans or black beans.

    Don’t want the excessive fat brown ground beef has? You can use ground turkey. This simple taco soup recipe will become one of your favorite things.
